Sensory profile:

At first glance, it exhibits an intense golden yellow color with subtle green undertones, appearing clear and transparent. The aroma is broad and elegant, characterized by robust vegetal notes of artichoke and chicory, complemented by delightful hints of basil and mint. On the palate, it offers a refined and enveloping experience, showcasing flavours reminiscent of lettuce, black pepper, and a pronounced sweet almond finish. The bitterness and pungency are well-balanced and harmonious. It serves as a perfect accompaniment to bean appetizers, salmon carpaccio, spelled salads, artichoke risotto, grilled fish, grilled cuttlefish, marinated trout, vegetable soups, shellfish-based pasta dishes, boiled fish, sea bream tartare, fresh soft dough, and baked biscuits. 

Leccino variety:

Leccino is one of the rustic Italian varieties, mainly cultivated through Umbria and Tuscany. Nowadays it is expanding to the regions of Lazio, Puglia, Abruzzo, Campania and Marche. You can find Leccino olive trees all around the World, thanks to their good adaptability and high productivity. It is a well-appreciated olive due to its delicate flavour. The oil made from Leccino olives is sweet with balanced spicy and bitterness. Typical aromas: escarole, artichoke, almond and black pepper.

The Delicato from Quattriciocchi is, like its name suggests, a super delicate oil. It's got these amazing aromas of artichoke, chicory, and green tomatoes, with a hint of fresh green herbs like mint and basil. When you taste it, you'll pick up on the flavours of artichokes and lettuce, followed by a little kick of black pepper, and it finishes off with this sweet almond goodness. The bitterness and spiciness are perfectly balanced, not too strong, not too mild. If you're into oils that are all about harmony, with just the right amount of bitterness and intense aromas, this one's for you. We only use it to put the finishing touch on our pasta or fish dishes.
