Producers note:
This Extra Virgin Olive Oil has a medium-high green fruitiness. It has aromas of green grass and tomato with important tinges of artichoke, fig, almond, and apple. To the palate, it has a very mild bitterness and a pleasant medium spice level. It is a complex, well balanced oil.
Conservation:
For its correct conservation, it is essential to keep the oil in a closed container, in a cool place, and away from light (especially sunlight).
Nevadillo Blanco variety:
Nevadillo Blanco is a traditional Spanish variety mostly cultivated in Andalusia, Jaén. This variety is a ‘sub-variety’ of Picual olives. People often refer to it as Picual olives but it's different genetically from the Picual olive tree. It is also a dual-purpose olive, suitable for table olives as well as for making olive oil. Its fruit has a high content of Polyphenols, therefore, is an extremely stable oil that makes it perfect for cooking, and also has a long shelf life. Its oil has a fruity flavor with medium spicy and bitter notes. Typical aromas are green herbs, tomato, fig tree, leaf olive, and freshly cut grass.

Acieites Hacienda el Palo is among the best olive oil producers in Jaén, the World Capital of Olive Oil. They have countless, national and international awards, and with great family history. The Martos Ávila family has been producing olives for four generations since 1941. In the early 2000s, they decided to build a modern mill on their farm, to transform their olives into a golden liquid. Today they are producing ca.54000 hectolitres of oil per year. The olives come from the Family Farm, which is 300 hectares with 30 000 trees, as well as from selected local producers. We couldn’t wait to taste this oil. When it arrived the first thing we did was take out one bottle from its box and pour it into a tasting glass. In terms of aromas, the Baravoleum Novadillo Blanco is beautifully complex and harmonious. Grass, tomato, artichoke, fig, apple, and green almond are all there. At tasting, grass, tomato and apple come forward followed by pleasant notes of artichoke and almond. It comes with mild bitterness and medium spiciness. Although it is stable and perfect for cooking, we use it only raw. A great company for tapas nights with some lovely sourdough bread. This is The Bravoleum Nevadillo Blanco, classic and complex, just beautiful. Enjoy!
