Harvesting technique: picked by hand with manual or hand-held pneumatic combs.

Harvest time: October and November.

Crushing method: high-tech continuous mechanical crushing equipment.

Storage: reseal after use, keep it in a cool dry place far away from heat and light sources.

Tasting Notes:

Appearance: limpid after filtering.

Density: average fluidity.

Color: green with a light golden tinge.

Aroma: fragrant and elegant to the nose with hints of vegetal notes that recall the artichoke, white almond and sage. Flanked by the balsamic scent of rosemary and wild mint.

Taste: it is fine and enveloping, marked by vegetal tones of thistle, aromatic notes of mint and spicy nuances of black pepper and cinnamon. Bitter and spicy notes are well expressed and balanced.

Recomandtaion of usage:

Perfect for raw vegetable appetizers and bean salads. It gives its best on yellow squash soup with seared squids. Ideal dressing for lake fish and fresh mushroom side dishes. It goes well with medium-aged cheeses. Excellent when used in the preparation of fruit tarts, apple strudel and chocolate biscuits.

Moraiolo variety:

Moraiolo is an Italian variety and originates from the Tuscany region. It is well known for the quality of oil it produces. The Moraiolo Extra Virgin Olive Oil is a distinctively fruity oil with high intensity of bitter- and spiciness. Olive Oil made from the Moraiolo variety has pleasant aromas of fresh grass, green almond and artichoke.

Frantoio variety:

Frantoio is an Italian olive variety originally from the Tuscany region. Frantoio olives have excellent organoleptic characteristics therefore its EVOO is highly appreciated all around the World. The olive oil made from Frantoio olives has very high stability, which makes it suitable even for frying. Its oil has a fruity flavour with mild spicy and bitter notes. Typical aromas are fresh herb, tomato, lettuce, artichoke, apple, grain, rosemary, celery and almond.

The family farm spans 14 hectares with 5000 olive trees. This is the exquisite Costa del Riapro from the harvest year 2022/23, truly a marvel. Let's begin with some technical details. This exceptional organic extra virgin olive oil is a perfect blend of Frantoio and Moraiolo olives, combining the finest qualities of both varieties. As you uncork the bottle, a magical experience unfolds. An array of delightful aromas permeates the air: green tomato, artichoke, rosemary, apple, and fresh green herbs, all perfectly harmonized. We even detected subtle hints of peppermint, adding captivating complexity to this remarkable oil. During the tasting, the dominant flavors emerge, showcasing the essence of artichoke and green almond, accompanied by a gentle infusion of fresh green herbs. It comes with a medium spiciness and bitterness in perfect balance. Words alone can not capture the full essence of this oil; it is truly a masterpiece from Italy. We reserve this oil exclusively for finishing dishes or dipping fresh sourdough bread, complemented by the likes of San Daniele, Parma, or Serrano hams, olives, and a touch of Pecorino cheese.
