Tradition and Innovation

This is the most traditional varietal in our area, where experience makes virtue. Through a careful pressing at the mill we obtain this oil with a high amount of antioxidants.

The olive

This native varietal is not only valued for its agricultural hardiness, but also for the high quality of the oils obtained from it.

It is the only varietal protected by the Designation of Origin Montes de Toledo, to which we belong.

Due to its resistance to our cold winters and hot summers, Cornicabra has been, since ancient times, the dominant variety in Castille -La Mancha.

Casas de Hualdo Cornicabra is produced from our olive groves located at the highest altitude in lighter, more-calcareous soils.

Tasting

Its antioxidants confer it with a variety of aromas such as green leaf and apple, which combine perfectly with marked bitter and spicy notes. Cornicabra is an oil that is full of character and which remains stable over time.

Pair it with…

The typical persistence of the Cornicabra variety makes it ideal to accompany consistent tapas such as assorted cecina, patatas bravas or pinchos morunos. It enhances spoon dishes, rice, pasta and vegetable pizzas. It pairs perfectly with roasts, lamb and stews. Try it on vegetable barbecues, especially artichokes, aubergines, courgettes or salads based on endive leaves or watercress. Delicious on intense chocolate preparations, such as mousses and coulant!

Cornicabra variety:

The oil extracted from Cornicabra olives has a high content of Oleocanthal. Typical aromas: green leaves, tomato and almond. Early harvested Cornicabra oil is intensively spicy and bitter. If the olives are harvested later in the season the oil can be more forgiving, sweet with notes of exotic fruits just as avocado. As it is a stable oil it is suitable for cooking and frying.

Casas de Hualdo is a relatively young family business working on 630 hectares with 285 000 olive trees. They planted their first olive tree in 1996 and had their first harvest in 1999. In the year 2009, they opened their mill and this is the point when the Casas de Hualdo story gets exciting. Just a few years later they become one of the most recognised olive oil producers of Spain with countless national and international awards won. We think Casas de Hualdo is the perfect example of finding the balance between utilising the latest technology while maintaining respect for traditions. The result is an exceptional quality olive oil.

When you open a bottle, you'll immediately be greeted by delightful green aromas like green apple, green almond, lamb lettuce and rocket. On the palate, it has a slightly sweet entrance with refreshing green notes that perfectly complement the oil's bitterness and spiciness. This cornicabra oil packs a punch with its robust character, so get ready for a flavor-packed journey. We love using it for cooking, adding the final touch to dishes, and even for dipping. Drizzling it over our roast potatoes is a sheer delight, but it truly shines when used in stews and casseroles. In 2023, it achieved an outstanding score of 100 points from Flos Olei, placing it among the top 50 oils in the world in terms of quality.
