The olive

The pulp is meaty, evocative and full of flavour. This variety has been used since antiquity as a traditional green dressing or for the production of oils.

Origin

Coming from Cáceres, this variety is fully adapted to our soils and conditions, gifting us with a unique juice, which is hard to mistake with other varietals, since it features some very special characteristics.

Tasting

With a fine and soft structure, it is balanced between bitterness and spiciness. It is an ideal oil for those seeking persistence in the mouth. With intense fruitiness, it brings back the tomato plant, chicory and basil.

Pair it with…

The intense fruitiness of this AOVE makes it highly recommended for accompanying fatty fish recipes such as papillote salmon or tuna with onions. It is ideal in the preparation of sauces such as bolognese, Spanish sauce or pesto. It enhances complex preparations of pasta, try it on a vegetable lasagna and some ricotta ravioli. It complements very well the dishes of spoon, pour it in a Madrilenian stew or some stewed lentils.

Manzanilla variety:

Manzanilla olives and their oil have a tangy, slightly bitter flavor with aromatic notes of herbs, grass, and fruitiness. The oil is versatile, used as a finishing touch for salads, grilled vegetables, and pasta, and adds depth to marinades, dressings, sautéing, and pan-frying. Manzanilla olives are cultivated in various regions, with a significant percentage of cultivation in Mediterranean countries such as Spain, Greece, and Italy.

Casas de Hualdo is a relatively young family business working on 630 hectares with 285 000 olive trees. They planted their first olive tree in 1996 and had their first harvest in 1999.
