Crafted from the Arbequina variety, native to the Ebro Valley in Arbeca (Lleida), BIO Extra Virgin Olive Oil is meticulously cultivated and produced on the Artajo Farm.

Tasting Profile: this exceptional olive oil boasts a green fruity character with profound vegetable nuances, evoking the essence of tomato branches and artichokes. Additionally, it brings forth notes of sweet fruit, particularly green banana. On the palate, a harmonious blend unfolds, featuring a sweet undertone and a moderate balance of bitterness and spiciness.

Pairings: it can be used in many ways and pairs nicely with different vegetables, making it great for preparing sauces.

Arbequina variety:

Arbequina, a traditional Spanish olive variety, ranks as the second most popular variety in Spain in terms of crop area. The olive oil derived from Arbequina boasts aromatic, sweet, and fruity notes, accompanied by a subtle bitterness. Common aromas associated with this variety include green grass, tomato, apple, banana, and ripe fruit. Generally, oils produced from Arbequina olives exhibit low oxidation resistance. To address this, producers frequently blend Arbequina olive oil with other varieties to enhance overall stability in terms of aroma, body, and resistance to oxidation.

About Aceite Artajo:

The rich history of Artajo olive oil begins around the year 1780, with the Artajo family's decision to transform their olive oil and wine production into a thriving business. Over the course of approximately two centuries, the world turned upside down, but the Artajo Family continued its legacy of producing olive oil and wine until 1960.

In 1960, they decided to temporarily close the family business for a short period of 38 years. In 1998, Maria Dolores Artajo and Francisco Urzaiz breathed new life into the family legacy by reopening the business. They embarked on the reconstruction of the family mill, incorporating the latest technology, and successfully revitalized 85,000 Arbequina trees on the family estate.

Today, the Artajo estate spans 225 hectares of olive groves, boasting around 220 thousand trees. Aceite Artajo stands out as one of the rock stars in the world of olive oil. Picture this: within a mere two hours after harvest, the olives are processed in the mill, transforming into the amazing EVOO. Such remarkable performance is a testament to the unwavering dedication and effort invested.

On the palate, the freshness lingers. It features flavors such as Jerusalem artichokes, green apple, and green banana, complemented by a hint of cucumber that enhances the overall fresh feeling. With low bitterness and spiciness, it offers a delightful tasting experience.
