Balance and harmonious

Produced using the picual and arbequina varietals, its name is a homage to these majestic birds which, only in special circumstances, choose to nest in trees as they have done in our Estate.

Using selected batches of these very early harvesting olives and making an independent extraction of these monovarietals, this oil of extraordinary quality is obtained.

Tasting

Fragrant, with intense fruitiness where aromas such as green grass, tomato plant, balsamic and spices are highlighted. There are identifiers of basilicum, green almond and arugula. It is complex and elegant, with medium intensity bitterness and spiciness, providing it with a solid structure and long persistence. Balanced and harmonious. Green fruit and spice notes.

Pair it with…

It enhances tomato and fresh onion salads, pairs white fish like a Biscayan-style cod. This EVOO is ideal for adding complexity to pasta dishes, use it in the preparation of spaghetti carbonara or pizzas with black olives and vegetables. Surprise with an exotic touch, over a tuna and leek tataki!

Picual variety:

The Picual olives are one of the most cultivated varieties of Spain. The olive oil extracted from Picual olives has a medium aromatic profile with pleasant notes of tomato, fig tree, olive leaf, and freshly cut grass. Its oil is also well known for its strong bitter- and spiciness. It is often mixed with other oil to soften its bitterness and enhance its fruity flavor. Thanks to its stability the olive oil extracted from Picual olive has a long shelf life and makes it stable for cooking or frying.

Arbequina variety:

Arbequina, a traditional Spanish olive variety, ranks as the second most popular variety in Spain in terms of crop area. The olive oil derived from Arbequina boasts aromatic, sweet, and fruity notes, accompanied by a subtle bitterness. Common aromas associated with this variety include green grass, tomato, apple, banana, and ripe fruit. Generally, oils produced from Arbequina olives exhibit low oxidation resistance. To address this, producers frequently blend Arbequina olive oil with other varieties to enhance overall stability in terms of aroma, body, and resistance to oxidation.

Casas de Hualdo is a relatively young family business working on 630 hectares with 285 000 olive trees. They planted their first olive tree in 1996 and had their first harvest in 1999. In the year 2009, they opened their mill and this is the point when the Casas de Hualdo story gets exciting. Just a few years later they become one of the most recognised olive oil producers of Spain with countless national and international awards won. We've had our eye on this oil for quite a while, and we're thrilled to finally have it in our shop. It's not just any oil; it's a special EVOO with an extraordinary story. Several decades ago, a pair of Golden Eagles (Aquila chrysaetos) built their nest on a holm oak tree in the forest area of Hualdo. These magnificent birds call the Casas de Hualdo farm their home and have diligently cared for their eaglets while hunting rabbits in the olive groves to feed them. The presence of these Golden Eagles signifies the delicate balance between nature and the Casas de Hualdo farm, as these birds typically steer clear of human activity. This remarkable oil symbolizes the harmonious connection between humans and nature, an achievement realized by Casas de Hualdo.

Now, let's dive into the oil itself. This EVOO is just as captivating as its narrative. It's a blend of Arbequina and Picual varieties, boasting delightful aromas of green grass, basil, green tomato, and olive leaf. On the palate, it delivers a fresh, green, and fruity flavor profile, with subtle hints of salsify emerging towards the finish. The medium spiciness and bitterness are perfectly balanced.
