Viola Nuovo Extra Virgin Olive Oil (500ml) - Frantoio & Leccino Blend

“Nuovo: the freshly harvested extra virgin olive oil. Filtered. It marks the beginning of the new oil campaign, resulting from a meticulous selection of cultivars picked at the optimal level of ripeness. It is clear with an emerald green color and boasts intense aromas of vegetation with a robust flavor. We cherish it in this state until the very last drop. Filtration ensures the best preservation over time, maintaining its nutritional and organoleptic properties. It's the Nuovo Viola.” - Marco Viola 

Harvesting technique: picked by hand with manual or hand-held pneumatic combs.

Harvest time: October.

Crushing method: high-tech continuous mechanical crushing equipment.

Storage: reseal after use, keep it in a cool dry place far away from heat and light sources. 

Tasting notes:

Appearence: limpid after filtering.

Density: average fluidity.

Color: green with golden tinge.

Aroma: To the nose, it is rich and enveloping, characterized by deep vegetal notes of freshly mown grass, accompanied by balsamic hints of mint, and elegant nuances of wild chicory, artichoke, and white almond, concluding with a subtle note of tomato leaf.

Taste: Complex and elegant, with predominant vegetal and wild herb notes, where artichoke and balsamic herbs take center stage. Sage and mint flavors prevail, while the persistent bitter and pungent tones are well-balanced.

Recommendation for usage:

Best enjoyed raw on classic bruschetta or Umbrian panzanella. Perfect for tomato and oregano salads. Excellent when drizzled over chickpea and bean soups or paired with crayfish cream. It complements tuna carpaccio and grilled red meat exceptionally well. Ideal for topping rosemary pizza.

Frantoio variety:

Frantoio is an Italian olive variety originally from the Tuscany region. Frantoio olives have excellent organoleptic characteristics therefore its EVOO is highly appreciated all around the World. The olive oil made from Frantoio olives has very high stability, which makes it suitable even for frying. Its oil has a fruity flavour with mild spicy and bitter notes. Typical aromas are fresh herb, tomato, lettuce, artichoke, apple, grain, rosemary, celery and almond.

Leccino variety:

Leccino is one of the rustic Italian varieties, mainly cultivated through Umbria and Tuscany. Nowadays it is expanding to the regions of Lazio, Puglia, Abruzzo, Campania and Marche. You can find Leccino olive trees all around the World, thanks to their good adaptability and high productivity. It is a well-appreciated olive due to its delicate flavour.  The oil made from Leccino olives is sweet with balanced spicy and bitterness. Typical aromas: escarole, artichoke, almond and black pepper.

The tale of Viola Olive Oil begins in the early 19th century when Biagio and Lucia passed on their love and passion for olive trees to their son, Ferdinando. The family farm spans 14 hectares with 5000 olive trees. Presently, they harvest olives from 65 hectares with 22,000 trees, producing olive oil in the family mill built in 1927, now equipped with the latest technology. This oil is truly exceptional. As its name, 'NUOVO,' implies - meaning new - it represents the initial batch of the 2023/24 harvest season. Holding a special significance for the Viola family, it symbolizes the ongoing legacy of their heritage and serves as an annual reminder that olive oil is a genuine gift of nature. The Viola Nuovo stands out as the freshest oil currently available in our shop. We consider ourselves fortunate to have a limited stock of this oil. With its beautiful and intense aromas, featuring herbaceous notes of freshly mown grass, alongside scents of mint, tomato, and artichoke, this oil promises a unique experience. Upon tasting, it delivers a fruity green olive flavor with subtle hints of artichoke, sage, and mint. The taste is clear and distinct, characteristic of freshly pressed oil, offering a medium to low bitterness and medium to high spiciness, making it an intense experience. Everything that leaves the Viola farm is impeccable, but this particular oil, with its distinctive meaning and freshness, certainly falls into the must-try category. Enjoy!
