Extra Virgin Olive Oil, produced exclusively from the Arbequina variety.
To produce this oil, Agrícola La Maja harvests the olives when these begin to ripen, something that usually occurs at the end of October or beginning of November. It is prepared cold within twelve hours of harvesting, which produces very low-fat yields, but highly intense aromas.
It has a clean smell that is surprisingly lively, reminding one of fresh green fruit. Tones of tomato and tomato plant can be appreciated and, to a lesser extent, banana and wild fruit. It tastes of bitter almonds, slightly spicy, ending sweet and aromatic.
Olive oil made from Arbequina variety is aromatic, sweet and fruity with a little bitterness. Typical aromas: green grass, tomato, apple, banana, ripe fruit. Usually, oils made from Arbequina variety has low oxidation resistance. Producers mix the Arbequina olive oil with other olive oil to increase the stability in terms of aroma, body and resistance to oxidation.

It is a beautiful monovarietal olive oil. Made from 100% Arbequina. It is sweet and fruity with a slight spiciness. As it is a delicate oil we use it for salads, mayonnaise and other sauces. We also love it with pasta dishes, seafood or any fish. As it is a great substitute for butter we also recommend it for baking. Before you use this oil we recommend tasting it on its own, you will be amazed by the inherent fruit notes. You can find a step by step tasting guide on our webshop. Enjoy!
