About Aceite Artajo:
The rich history of Artajo olive oil begins around the year 1780, with the Artajo family's decision to transform their olive oil and wine production into a thriving business. Over the course of approximately two centuries, the world turned upside down, but the Artajo Family continued its legacy of producing olive oil and wine until 1960.
In 1960, they decided to temporarily close the family business for a short period of 38 years. In 1998, Maria Dolores Artajo and Francisco Urzaiz breathed new life into the family legacy by reopening the business. They embarked on the reconstruction of the family mill, incorporating the latest technology, and successfully revitalized 85,000 Arbequina trees on the family estate.
Today, the Artajo estate spans 225 hectares of olive groves, boasting around 220 thousand trees. Aceite Artajo stands out as one of the rock stars in the world of olive oil. Picture this: within a mere two hours after harvest, the olives are processed in the mill, transforming into the amazing EVOO. Such remarkable performance is a testament to the unwavering dedication and effort invested.
One of our dreams came true when we received the first shipment from the Artajo Farm. We really love everything they make, and we're sure you'll enjoy the awesomeness they put into each EVOO they create!
Artajo Farms presents its finest olives. The oil blend's composition varies each year due to the distinct harvest annually. Artajo's coupage consistently embodies the farm's excellence, and this year is no exception. Upon opening a bottle, you'll be greeted by delightful herb aromas like thyme and basil, complemented by vegetable notes such as aubergine and artichoke. On the palate, it unveils vegetable tones with a finish reminiscent of green almonds. This oil boasts a moderate bitterness and medium to high spiciness. It's a meticulously crafted oil, ideal for enhancing any vegetable dish - take, for instance, our Ratatouille made from fresh tomatoes, peppers, aubergine, and courgette, served alongside fresh sourdough bread.
