Bacci Noemio Organic Extra Virgin Olive Oil (500ml) – Moraiolo, Frantoio & Leccino 

100% Cold-pressed, certified ICEA Organic olive oil.

Harvest: commences in the early days of October.

Cultivar: Moraiolo variety, 100%.

Extraction: utilizes a continuous method with cold extraction employing state-of-the-art Alfa Laval technology, adhering to the highest quality standards currently accepted and recommended. Olive milling occurs within 24 hours of harvesting, preceded by thorough leaf removal and olive washing. Milling is conducted under low oxygen flow conditions with closed mills. Throughout the extraction process, temperature is closely monitored to ensure it does not exceed 27°C. Crushing methods, whether disc or hammer crushers, are selected based on the cultivar and harvest time, in accordance with the prevailing quality standards recognized and tested by national and international research. This includes recommendations from the University of Perugia, Department of Agricultural Industries and Quality Improvement of extra virgin olive oil.

Filtration: the oil undergoes filtration to retain its organoleptic and health qualities for as long as possible.

Appearance: clear.

Color: green with subtle yellow hues.

Storage: conducted in fully air-conditioned rooms and stainless steel containers under nitrogen seal. Subsequently, barrels are sealed in a protected atmosphere to optimize preservation.

Bottling: carried out using a fully automated system within a nitrogen atmosphere.

Organoleptic Analysis:

Its aroma reveals fruity hints of grass and artichoke, while its enveloping taste showcases a fine balance of subtle bitterness with a sharp, lingering spiciness. With a medium yet assertive fruity character, characteristic of this variety, it presents an aromatic profile abundant in fresh olive tones and balsamic herbs. On the palate, it is accompanied by prolonged and persistent notes of artichoke and rocket. The bitter and spicy sensations, while robust, are finely tuned and well-proportioned.
