It is produced from a careful selection of our very old Oloroso wines and a reduction of Pedro Ximénez raisined grape must, which contributes to a significant aromatic complexity. A sweet and velvety Gran Reserva vinegar.

Tasting Notes

Color: Intense ebony, with bright and well-defined iodized touches.

Aroma: Very fruity with notable raisined grape and oak wood notes. It emits a complex, intense, and distinctive aroma.

Taste: Gentle, sweet, and velvety. An exquisite flavor.

Serving Suggestions

It adds a wonderful touch to foie gras, aged and blue cheeses, meats, especially game, salads, and sauces. It is also ideal for Asian cuisine due to its texture and excellent balance between sweetness and acidity. Perfect for tataki, tuna tartare, and salmon.

About Bodegas Toro Albalá:

The remarkable story of Bodegas Toro Albalá begins in 1844, when the Toro Albalá Family established a small wine cellar to provide their beloved family tavern with house wine. Through the generations, in 1922, José María Toro Albalá made a significant investment by acquiring the town's power plant, which he transformed into a wine cellar. This move was a turning point, allowing the family's wine to become more than just a beverage; it marked the official founding of Bodegas Toro Albalá.

Fast-forwarding to the 1970s, Antonio Sánchez introduced a pioneering approach to winemaking. He focused his passion on Andalusia's unique grape variety, the Pedro Ximénez of Montilla Moriles, and crafted it into a true masterpiece, putting Bodegas Toro Albalá on the global stage as a producer of exceptional wines.

While Bodegas Toro Albalá is celebrated for its superb wine quality, they also offer an equally splendid range of vinegars. During our visit to Madrid, we had the pleasure of tasting Bodegas Toro Albalá's vinegar, and it was an enchanting experience that captured our hearts. Therefore, we brought it back home to share with you.

Impressive! This vinegar is an ideal companion for culinary endeavors. Its remarkable balance ensures that it won't overwhelm your dishes. Crafted with precision, it combines Oloroso wines and a Pedro Ximénez reduction to create a harmonious and intricate bouquet of scents, including notes of raisin, plum, caramel, and a subtle hint of oak. Its flavor is sweet and impeccably well-rounded, mirroring its aromatic qualities. This vinegar caters to both seasoned cooks and adventurous kitchen novices.

We use this vinegar to marinate duck breast, along with maple syrup, salt, pepper, garlic, and a touch of chilies, resulting in a truly exceptional outcome. It is also amazing for dressing salads or desserts and is an excellent complement to vanilla ice cream. Mix it with olive oil and simply dip your sourdough bread in it. Its potential is limitless, allowing you to explore your culinary creativity to the fullest.
