Producer's Notes:
Cornicabra is complex and deep, intense and incomparable - the only olive variety native to the Toledo region. Its fruity character is complemented by notes of green apple, fresh grass, and green almond.

This Cornicabra EVOO is recognized for its intense profile and notable bitterness. The olives are harvested particularly early to ensure the oil has a bold presence without overwhelming the dish. That distinctive, untamed character reveals itself on the palate with:
Fruity, intense flavor with notes of fresh grass and green almond, followed by subtle hints of arugula and lamb’s lettuce. More pronounced bitterness than other varieties, with a moderate peppery finish that suits its character. Medium persistence that enriches dishes with lasting complexity.

Cornicabra variety:
The oil extracted from Cornicabra olives has a high content of Oleocanthal. Typical aromas: green leaves, tomato and almond. Early harvested Cornicabra oil is intensively spicy and bitter. If the olives are harvested later in the season the oil can be more forgiving, sweet with notes of exotic fruits just as avocado. As it is a stable oil it is suitable for cooking and frying.

On the palate, it has a slightly sweet entrance with refreshing green notes that perfectly complement the oil's bitterness and spiciness. This cornicabra oil packs a punch with its robust character, so get ready for a flavor-packed journey. We love using it for cooking, adding the final touch to dishes, and even for dipping. Drizzling it over our roast potatoes is a sheer delight, but it truly shines when used in stews and casseroles. In 2023, it achieved an outstanding score of 100 points from Flos Olei, placing it among the top 50 oils in the world in terms of quality.
