Olive
This blend of our organic Arbequina and Cornicabra varieties has a perfect balance between the marked character of the Cornicabra variety and the subtle fruitiness of the Arbequina.
These olive trees are grown in extreme conditions at 800m altitudes.
Full of aromas, our Organic EVOO is characterized by its medium intensity, with a predominance of fruity notes over bitter and spicy tones.

Tasting notes
The nose reveals a fresh, perfumed and complex oil. Soft sensations of tomato and ripe fruit appear, along with subtle green hints.
On the palate, the entry is sweet and silky, and after a moment, bitter and spicy sensations of medium intensity unfold. Aromas of tomato, arugula, chicory, avocado, alloza, green apple and green grass are discovered, with ripe notes of apple and banana prevailing.

Our organic EVOO gives character to rocket, tomato and nut salads. In the kitchen, it enhances rice dishes with rabbit and fried squid. It combines ideally with spoon dishes such as fabada and stewed pinto beans with cabbage. What about combining it with sweet and savoury touches in a turkey stuffed with raisins and chestnuts?
Arbequina variety:
Olive oil made from Arbequina variety is aromatic, sweet and fruity with a little bitterness. Typical aromas: green grass, tomato, apple, banana, ripe fruit. Usually, oils made from the Arbequina variety has low oxidation resistance. Producers mix the Arbequina olive oil with other olive oil to increase the stability in terms of aroma, body and resistance to oxidation.
Cornicabra variety:
The oil extracted from Cornicabra olives has a high content of Oleocanthal. Typical aromas: green leaves, tomato and almond. Early harvested Cornicabra oil is intense spicy and bitter. If the olives are harvested later in the season the oil can be more forgiving, sweet with notes of exotic fruits just as avocado. As it is a stable oil it is suitable for cooking and frying.

Casas de Hualdo is a relatively young family business working on 630 hectares with 285 000 olive trees. They planted their first olive tree in 1996 and had their first harvest in 1999. In the year 2009, they opened their mill and this is the point when the Casas de Hualdo story gets exciting. Casas de Hulado Organic is a blend of Arbequna and Cornicabra varieties. It highlights the best of the two varieties. First, you will experience the Arbequina, fruity aromas both sweet and harmonious, you will then notice the distinguished green notes of Cornicabra. At the tasting, first comes the Arbequina and then the Cornicabra kicks in with medium spiciness. Perfect everyday oil for intermediate users.
