Tating notes: 

Casas de Hualdo Organic olive oil offers a balanced and delicate sensory profile. On the nose, notes of green tomato, almond, and apple; on the palate, mild bitterness and medium peppery warmth. Its finish is brief, making this a light and elegant option—ideal for enhancing subtle flavors without overpowering them.

Key Characteristics:

Crafted from organic Arbequina and Cornicabra olives. Grown without pesticides or synthetic chemicals. Harvested early to preserve freshness and antioxidants. Cold-extracted at less than 25°C. Produced on a certified organic estate. Delicate green fruity profile. Mild bitterness and medium peppery warmth. Exceptional freshness and purity.

Arbequina variety:

Arbequina, a traditional Spanish olive variety, ranks as the second most popular variety in Spain in terms of crop area. The olive oil derived from Arbequina boasts aromatic, sweet, and fruity notes, accompanied by a subtle bitterness. Common aromas associated with this variety include green grass, tomato, apple, banana, and ripe fruit. Generally, oils produced from Arbequina olives exhibit low oxidation resistance. To address this, producers frequently blend Arbequina olive oil with other varieties to enhance overall stability in terms of aroma, body, and resistance to oxidation.

Cornicabra variety:

The oil extracted from Cornicabra olives has a high content of Oleocanthal. Typical aromas:  green leaves, tomato and almond. Early harvested Cornicabra oil is intense spicy and bitter. If the olives are harvested later in the season the oil can be more forgiving, sweet with notes of exotic fruits just as avocado. As it is a stable oil it is suitable for cooking and frying.

Casas de Hualdo is a relatively young family business working on 630 hectares with 285 000 olive trees. They planted their first olive tree in 1996 and had their first harvest in 1999. In the year 2009, they opened their mill and this is the point when the Casas de Hualdo story gets exciting. Just a few years later they become one of the most recognised olive oil producers of Spain with countless national and international awards won. We think Casas de Hualdo is the perfect example of finding the balance between utilising the latest technology while maintaining respect for traditions. ElOlivo review:

This year's Organic Casas de Hualdo is absolutely amazing, just like always. The oils from Casas de Hualdo keep getting better with each passing year. Let's talk about the 2023 Organic; this oil is definitely not mild. It has these incredible green aromas of fresh tomatoes, rocket, and bitter green almonds. When you taste it, you'll notice some sweet veggie flavours along with a touch of green fruitiness, but then the bitterness and spiciness kick in. We were blown away by its complexity. So, it's not a gentle oil, but it's truly lovable. We use it for both cooking and finishing, especially with vegetable dishes. Our favorite combination is roasted eggplant with Mojo sauce and a side of Greek yogurt sprinkled with black sesame seeds. Enjoy!
