Reserva de Familia coupage is made by milling small batches of olives from the best plots on the Hualdo estate, from four varieties of olive tree: arbequina, picual, cornicabra and manzanilla. Each variety is harvested on different days, all of them are tested until the best of each variety is achieved.

This oil is intended to reflect the passion for the trade and above all the gratitude for the generosity that nature shows in the lands of the Tagus River. An oil of great elegance and rounded balance, powerful, with an extraordinary structure and aromatic persistence.

Reserva de Familia Casas de Hualdo brings elegance and persistence to complex dishes, such as seafood risotto, venison stew in red wine or cheeks in chocolate sauce. Combine it with vegetables such as chard cake, brussels sprouts, spinach, stuffed tomatoes and roast peppers. If you prefer a salad, combine it with rocket leaves, radishes and fresh onions. Simply enjoy all its nuances on top of some noble sausages and aged cheeses.

Arbequina variety:

Arbequina, a traditional Spanish olive variety, ranks as the second most popular variety in Spain in terms of crop area. The olive oil derived from Arbequina boasts aromatic, sweet, and fruity notes, accompanied by a subtle bitterness. Common aromas associated with this variety include green grass, tomato, apple, banana, and ripe fruit. Generally, oils produced from Arbequina olives exhibit low oxidation resistance. To address this, producers frequently blend Arbequina olive oil with other varieties to enhance overall stability in terms of aroma, body, and resistance to oxidation.

Picual variety:

The Picual olives are one of the most cultivated varieties of Spain. The olive oil extracted from Picual olives has a medium aromatic profile with pleasant notes of tomato, fig tree, olive leaf, and freshly cut grass. Its oil is also well known for its strong bitter- and spiciness. It is often mixed with other oil to soften its bitterness and enhance its fruity flavour. Thanks to its stability the olive oil extracted from Picual olive has a long shelf life and makes it stable for cooking or frying.

Cornicabra variety:

The oil extracted from Cornicabra olives has a high content of Oleocanthal. Typical aromas:  green leaves, tomato and almond. Early harvested Cornicabra oil is intense spicy and bitter. If the olives are harvested later in the season the oil can be more forgiving, sweet with notes of exotic fruits just as avocado.   As it is a stable oil it is suitable for cooking and frying.

Manzanilla variety:

The oil extracted from the Manzanilla olives has a medium aromatic profile, low bitterness and a medium pungency. Typical aromas: grass, straw and pepper. Due to its antioxidant composition, olive oil extracted from Manzanilla olives has high stability.  

About Casas de Hualdo:

Casas de Hualdo is a relatively young family business working on 630 hectares with 285 000 olive trees. They planted their first olive tree in 1996 and had their first harvest in 1999. In the year 2009, they opened their mill and this is the point when the Casas de Hualdo story gets exciting. Just a few years later they become one of the most recognised olive oil producers of Spain with countless national and international awards won. We think Casas de Hualdo is the perfect example of finding the balance between utilising the latest technology while maintaining respect for traditions. The 2023 Casas de Hualdo Reserva is an incredibly fruity oil. It's got these amazing scents of tomato leaf, green apple, fresh grass, and rocket. When you taste it, you'll experience a burst of green fruitiness with hints of wasabi. It's got a medium to high level of spiciness and a moderate bitterness. This oil is a masterpiece from Casas de Hualdo. But let me tell you, it's not for the faint of heart – it's bold and sharp. We save it for the weekends, using it to add that extra special touch to our meats, fish, and veggies. It's a must-try, no doubt about it!
