For those of you who do not want to give up on extra virgin olive oil for daily use, Casas De Hualdo have elaborated a new blend of Arbequina and Picual, with a predominance of the latter.
Picual gives the character, the explosion of aromas and the intensity to this EVOO and it has inspired the name of the new Casas de Hualdo tin EVOO.

This distinct blend is ideal for those who prefer robust oils with persistence and aroma, all at once. Green aromas of the tomato plant, olive leaf and lettuce prevail in this EVOO, perfumed with the notes of spices like basil and liquorice.

This EVOO for everyday cooking is ideal for frying and baking. Use it over sardines with pepper sauce, pork rounds and apple sauce, or simply to accompany boards of cured and semi-cured sausages and cheeses. The Picual olives are one of the most cultivated varieties of Spain. The olive oil extracted from Picual olives has a medium aromatic profile with pleasant notes of tomato, fig tree, olive leaf, and freshly cut grass. Its oil is also well known for its strong bitter- and spiciness. It is often mixed with other oil to soften its bitterness and enhance its fruity flavor. Thanks to its stability the olive oil extracted from Picual olive has a long shelf life and makes it stable for cooking or frying.
Olive oil made from Arbequina variety is aromatic, sweet and fruity with a little bitterness. Typical aromas: green grass, tomato, apple, banana, ripe fruit. Usually, oils made from the Arbequina variety has low oxidation resistance. Producers mix the Arbequina olive oil with other olive oil to increase the stability in terms of aroma, body and resistance to oxidation.
About Casas de Hualdo:
Casas de Hualdo is a relatively young family business working on 630 hectares with 285 000 olive trees. They planted their first olive tree in 1996 and had their first harvest in 1999. In the year 2009, they opened their mill and this is the point when the Casas de Hualdo story gets exciting. If you like the more robust oils, this would be your choice of everyday cooking oil. It represents all of the characteristics of the Picual variety with a twist of the Arbequina olives. It is a stable oil, resistant to high heat which makes it suitable for frying. A lamb curry is perfect with this oil, but the possibilities are endless.
