The Picual olives are one of the most cultivated varieties of Spain. The olive oil extracted from Picual olives has a medium aromatic profile with pleasant notes of tomato, fig tree, olive leaf, and freshly cut grass. Its oil is also well known for its strong bitter- and spiciness. It is often mixed with other oil to soften its bitterness and enhance its fruity flavor. Thanks to its stability the olive oil extracted from Picual olive has a long shelf life and makes it stable for cooking or frying.
Olive oil made from Arbequina variety is aromatic, sweet and fruity with a little bitterness. Typical aromas: green grass, tomato, apple, banana, ripe fruit. Usually, oils made from the Arbequina variety have low oxidation resistance. Producers mix the Arbequina olive oil with other olive oils to increase the stability in terms of aroma, body and resistance to oxidation.
The oil extracted from Cornicabra olives has a high content of Oleocanthal. Typical aromas: green leaves, tomato and almond. Early harvested Cornicabra oil is intensively spicy and bitter. If the olives are harvested later in the season the oil can be more forgiving, sweet with notes of exotic fruits just as avocado. As it is a stable oil it is suitable for cooking and frying.

This is a perfect organic monovarietal Picual olive oil. It delivers all of the classic aromas of the Picual olives such as green grass, tomato leaves with hints of apple and herbs. In mouth green banana and tomato with a pleasing proportion of pungency and bitterness. This is how a perfect Picual olive oil should be. Premium quality ‘all-rounder’ olive oil. You can use it raw or for cooking and frying, it is up to you.
Deortegas Cornicabra EVOO - ElOlivo review:
This is an exceptional quality olive oil full of surprises. In terms of aromas, it is a fine and delicate oil with fruity hints of green tomato, apple, banana and green almond with notes of basil. At tasting for it was surprisingly sweet and harmonious followed by the classic distinguished pungency and bitterness of the cornicabra variety. We drizzle this oil on our roast potatoes, tomato and goat cheese salad. This oil is also ideal for cooking, we make our stews and casserole with this oil. Exceptional quality, warmly recommended.
Deortegas Arbequina Organic EVOO - ElOlivo review:
This is a delicate EVOO with amazingly fresh green aromas such as banana, apple and almond. It is sweet and well balanced with a slight spiciness at the end. We were amazed by the fresh aromas of this oil, this is what makes this EVOO exceptional. We use it only raw, for dressing salads, soups or making sauces. We also tried it with our homemade Basque Cheese Cake and it was delicious. We use also this oil for making Basil Pesto. Pairs perfectly with the pine nuts and the Grana Padano.
