Tasting Notes:

A rich and aromatic oil with almond, fresh grass, kiwi, and apple notes. It has a dense and lasting body, with a medium-high intensity of bitterness and spiciness, adding depth and character to every dish.

Arbequina variety:

Arbequina, a traditional Spanish olive variety, ranks as the second most popular variety in Spain in terms of crop area. The olive oil derived from Arbequina boasts aromatic, sweet, and fruity notes, accompanied by a subtle bitterness. Common aromas associated with this variety include green grass, tomato, apple, banana, and ripe fruit. Generally, oils produced from Arbequina olives exhibit low oxidation resistance. To address this, producers frequently blend Arbequina olive oil with other varieties to enhance overall stability in terms of aroma, body, and resistance to oxidation.

Picual variety:

The Picual olives are one of the most cultivated varieties of Spain. The olive oil extracted from Picual olives has a medium aromatic profile with pleasant notes of tomato, fig tree, olive leaf, and freshly cut grass. Its oil is also well known for its strong bitter- and spiciness. It is often mixed with other oil to soften its bitterness and enhance its fruity flavor. Thanks to its stability the olive oil extracted from Picual olive has a long shelf life and makes it stable for cooking or frying.

Hojiblanca variety:

Hojiblanca is the third most popular variety in Spain in terms of corp area. The provinces of Andalusia play a key role in Hojoblnca olive cultivation. Hojiblanca olives are used both for the production of table olives and olive oil. Olive Oil made from the Hojiblanca variety has a pleasant aroma of cut grass, fresh fruit with hints of almond, tomato and apple. The Olive Oil made from the Hojiblanca variety has intense fruitiness, slightly bitter, sweet and spicy.

Cornicabra variety:

The oil extracted from Cornicabra olives has a high content of Oleocanthal. Typical aromas: green leaves, tomato and almond. Early harvested Cornicabra oil is intensively spicy and bitter. If the olives are harvested later in the season the oil can be more forgiving, sweet with notes of exotic fruits just as avocado. As it is a stable oil it is suitable for cooking and frying.

About García de la Cruz:

García de la Cruz is a cherished family business with a rich history spanning 148 years. It was founded in 1872 by Adelaida Fernández-Cuéllar, a visionary woman who built the company with dedication and perseverance. Her husband, Federico, worked as an attorney and public administrator, while Adelaida took on the remarkable challenge of growing their family business—an inspiring achievement, especially at a time when women’s roles were often confined to the home.

In 1931, their daughter, Guadalupe, took over the company, continuing her mother’s legacy. Over the years, the business has been passed down through three more generations, reaching the fifth generation today. Currently, Fernando García de la Cruz Pascual and Eusebio García de la Cruz Pascual manage the family farm, which spans 400 hectares and is home to 120,000 trees.

Today, García de la Cruz is known internationally for its exceptional products. The company is deeply committed to sustainability, prioritizing environmentally friendly agricultural techniques such as monitored drip irrigation and fertigation (drip fertilization). They also ensure that nothing goes to waste—byproducts from the olive oil-making process, including olive skins, pits, and pulp, are composted and transformed into natural organic fertilizers.

Additionally, García de la Cruz actively contributes to global sustainability efforts by aligning its operations with the Sustainable Development Goals.

Perhaps the key to García de la Cruz’s lasting success is its guiding philosophy: rather than focusing solely on profit, the company is dedicated to securing a bright future for the next generation of the family.

ElOlivo Review:

As its name suggests, this oil is the special blend crafted by García de la Cruz’s Master Miller. In an olive oil mill, the Master Miller oversees every step of the process, bringing years of knowledge in olive farming and oil production to create something truly exceptional.

This beautifully made organic EVOO is a harmonious blend of Arbequina, Picual, Hojiblanca, and Cornicabra olives. While the exact ratio remains a treasured secret of the Master Miller, what’s certain is that every drop is thoughtfully balanced.

Its aroma is wonderfully complex, with notes of fresh-cut grass, banana, ripe fruits, and delicate floral hints. When tasted, the bright tropical essence of kiwi stands out first, followed by ripe and dried fruit flavors. A gentle spiciness and touch of pungency round out the experience, making this oil both elegant and full of character.

We love using this oil to dress fresh salads or as a finishing touch on any dish, and it pairs beautifully with meats and cheese platters.

This Master Miller blend from García de la Cruz is made with care and expertise - and we highly recommend it!
