“La Maja”, is an exquisite blend (Arbequina, Empeltre and Arroniz) of oil in a limited annual edition.
It is the result of a meticulous selection of olive varieties, with great care taken in the quality of the olives and the entire “cold” production process being pampered to maintain all the virtues of the olive intact, together with their aromatic and taste qualities.
All this dedication enables us to obtain the perfect, exclusive extra virgin olive oil called “La Maja”.
Tasting notes:
It has a yellowish-green colour, with a clean, intense aroma, which is surprisingly lively, reminding one of fresh green fruit.
Tones of the tomato plant, grass, artichoke and apple can be appreciated and, to a lesser extent, a slight kiwi aroma.
Its aromas are re-affirmed in the mouth, with medium bitterness and a slight late "bite".
Arbequina variety:
Olive oil made from the Arbequina variety is aromatic, sweet and fruity with a little bitterness. Typical aromas: green grass, tomato, apple, banana, ripe fruit. Usually, oils made from the Arbequina olives have a low oxidation resistance. Producers mix the Arbequina olive oil with other olive oils to increase the stability in terms of aroma, body and resistance to oxidation.
Arróniz variety:
The Arrniz olive tree is mostly cultivated in the province of Navarra and Álava, as it adapts well to the cold and dry weather conditions of the area. The olive oil made from Arróniz olive has aromas of tomato and ripe fruits with a mild flavour and little bitterness. If it's harvested early in the season it presents higher levels of bitterness and spiciness. Olive oil made from Arróniz olives is stable, so it is suitable for frying.
Empeltre variety:
The Olive oil made from Empeltre olives is sweet with fruity aromas and has a mild taste. The Empltre olive tree adapts well to poor quality soil, but its yield is relatively high. Empeltre olives are mainly used for oil production.

This premium EVOO oil is a blend made by cold processing with Arbequina olives, Empeltre olives and Arroniz olives. Made from selected olives, therefore, this oil has excellent quality and taste. This Evoo has an amazing green such as fresh-cut grass, tomato leaf aromas. We only use it for salads or simply with a slice of bread or with some Serrano ham and olives. If we have a tapas night we have this oil on the table for sure.
