La Maja “Edición Limitada” (EL) is a selection of La Maja's finest single-variety oils, produced annually in limited quantities. "EL" is the result of years of dedication, testing different varieties—both in their cultivation and extraction processes—until achieving its essence: a genuine EVOO with a unique personality.

For years, La Maja has devoted a significant part of each harvest to producing these exceptional EVOOs.

They have tested different ripening stages, adjusting humidity levels, and modifying various production parameters - such as grinding method, mixing time, and temperature - to achieve the best expression of each variety.

This extensive research has led to the individual adaptation and optimization of the cultivation and extraction process for each variety they work with. However, natural factors, such as climate and olive ripening, mean that it is not always possible to obtain an exceptional EVOO from every variety. But when they do, the result is so spectacular that it more than justifies the effort.

Tasting notes: 

A dense, full-bodied green oil with a clean and vibrant aroma, distinguished by its fresh scent of green herbs and apple. Notes of tomato, tomato plant, and green banana are also present. It has a subtly bitter almond flavor, while apple and banana stand out on the palate. The spiciness is moderate, fluid, and well-balanced.

Arbosana variety:

The Arbosana olive variety is a Spanish cultivar known for its high oil yields and popularity in modern, high-density olive farming, particularly in regions like California and Chile. It has a relatively early harvest period and is prized for its consistent productivity. The oil it produces has a rich and complex aroma profile, featuring fruity notes of green apple, almond, and tomato leaf, along with subtle hints of herbs, artichoke, and freshly cut grass. Well-balanced with mild bitterness and a peppery finish, Arbosana oil is versatile and often used in gourmet cooking. Its delicate yet layered flavor enhances salads, dressings, and dipping oils, pairing well with a wide range of dishes without overpowering them.

On the palate, it delivers a truly remarkable sensation—starting with fresh green herbs, followed by a burst of green banana and apple notes, then a mild green almond bitterness, and finally, a subtle spiciness. We love it so much that we add it to almost everything edible in the kitchen, and we highly recommend you do the same! With its mild bitterness and spiciness, it pairs beautifully with nearly any dish.
