La Maja Edition Limitada "EL" (Limited Edition) is the selection of La Majas’ best monovarietal oils, unique, annual and "limited" production. "EL" is the result of years of work, testing with different varieties, both in crop as in the extraction process, to achieve its essence, a genuine EVOO with its personality.
For years, La Maja devoted much of each production campaign to produce EVOO with different olive varieties to provide a genuine monovarietal oil in "Limited Editions"
La Maja tested different ripeness phases, combining them with different moisture content and modifying many parameters (type of grinding, churning time and temperature, etc.) to achieve the best quality of each variety.
This large study has been concluded with the personalization and optimization of the cultivation and extraction process of each of the varieties we work in. However, natural factors such as the weather and the ripening of the olives do not always make it possible to get an exceptional EVOO of each variety. But when we get it, the result is so spectacular that it is worth the effort.
With some olive varieties, it is extremely complicated to get a genuine, spectacular
Arróniz variety (yellow label version) - green Extra Virgin Olive Oil, dense and full-bodied. The clean and fresh aroma of green vegetables, artichoke, apple, banana skin, grass, and notes of the tomato plant and bitter almond. Highlight in the mouth: artichoke and the tomato plant. This is an extremely smooth and fluid oil with high-middle bitterness balanced with high-middle spiciness.
The Arróniz olive tree is mostly cultivated in the province of Navarra and Álava, as it adapts well to the cold and dry weather conditions of the area. The olive oil made from Arróniz olive has aromas of tomato and ripe fruits with a mild flavour and little bitterness. If it's harvested early in the season it presents higher levels of bitterness and spiciness. Olive oil made from Arróniz olives is stable, so it is suitable for frying.

La Majas’ Limited Edition monovarietal Arróniz oil is an exceptional EVOO. It is full-bodied and has amazingly fresh aromas such as green vegetables, artichoke, apple, banana skin, grass notes of tomato and bitter almond. It is bitter and has medium-high spiciness. Arróniz olive oil is a stable oil therefore its usage in the kitchen is versatile. You can also fry with this oil. But in this case, we are talking about an exceptional quality olive oil, we use it only raw for dipping bread or with raw vegetable, cured meats and cheeses.
