Made exclusively from Aglandau olives grown in the producer’s own groves, this extra virgin olive oil contains no additives or added oils. It is extracted using mechanical methods only, with no chemical treatment or refining.

PRODUCTION PROCESS

  • The olives are sorted and cleaned
  • The oil is extracted by centrifugation
  • It is filtered through cloth
  • The oil is allowed to settle naturally
  • It undergoes a final filtration through blotting paper
  • The finished oil is packaged

Aglandau variety:

Aglandau is a traditional French olive variety, widely cultivated in Provence and particularly important in the olive oils of Haute-Provence and Aix-en-Provence. Used primarily for olive oil production, it can also be enjoyed as a table olive. Aglandau oils are known for their distinctive fruity character, with pronounced bitterness and pepperiness, giving them a robust and characterful profile.

About Domaines Paul Mas:

Domaines Paul Mas is a family wine producer with estates across the Languedoc in the south of France. The Mas family’s roots in the region’s vineyards date back to 1892, when Auguste Mas bought the family’s first nine hectares of vines. Today, Domaines Paul Mas is led by his great-grandson, Jean-Claude Mas.

The estates lie across the varied landscapes of the Languedoc, between the Mediterranean Sea and the mountains. Each has its own character, shaped by its location, climate and soils, while sharing a strong connection to the region and generations of family winegrowing.

Wine is at the heart of Domaines Paul Mas, but olive growing is also an important part of the estates. The family cultivates olive groves at Clos Astelia, Domaine Nicole, Domaine les Verrières, Mas des Tannes, Château des Crès Ricards and Château Martinolles, a natural complement to the vineyards of this Mediterranean landscape.

A truly honest EVOO, made from Aglandau, a traditional French olive variety.

On the nose, it’s gentle rather than intense, with notes of artichoke, apple and green almond, followed by subtle herbal undertones. Its aroma may be mild, but it still feels beautifully complex.

Then you taste it. Fresh vegetal flavours mingle with apple and mint, and at first, you might think it’s going to be a mild one. Give it a few seconds, though, and boom—a bold kick of spice and bitterness takes over. This is a robust oil, definitely not for the faint-hearted.

Enjoy it raw or use it for cooking. It’s fantastic with strong cheeses, meat, sourdough and lots - and we mean lots - of tomatoes. It’s also perfect for stews, grilling and marinades.

Just remember: this is a strong one. If you love bold, spicy and bitter olive oils, go for it and try it with pretty much anything edible. Enjoy!
