Picholine variety:

Picholine du Languedoc is a traditional olive variety from southern France and one of the country’s principal varieties. Hardy and well suited to the Mediterranean climate, it is used to produce both green table olives and olive oil. Its oil is known for its fruity character, fresh herbal and vegetal notes, gentle bitterness and lively, peppery finish.

About Domaines Paul Mas:

Domaines Paul Mas is a family wine producer with estates across the Languedoc in the south of France. The Mas family’s roots in the region’s vineyards date back to 1892, when Auguste Mas bought the family’s first nine hectares of vines. Today, Domaines Paul Mas is led by his great-grandson, Jean-Claude Mas.

The estates lie across the varied landscapes of the Languedoc, between the Mediterranean Sea and the mountains. Each has its own character, shaped by its location, climate and soils, while sharing a strong connection to the region and generations of family winegrowing.

Wine is at the heart of Domaines Paul Mas, but olive growing is also an important part of the estates. The family cultivates olive groves at Clos Astelia, Domaine Nicole, Domaine les Verrières, Mas des Tannes, Château des Crès Ricards and Château Martinolles, a natural complement to the vineyards of this Mediterranean landscape.

At its heart, Domaines Paul Mas is a story of family, place and a lasting respect for all that the Languedoc has to offer.

ElOlivo Review:

This is a lovely olive oil from the south of France, truly Mediterranean, with plenty of French character. It’s made from Picholine du Languedoc, a traditional French olive variety.

On the nose, we picked up aromas of apple and tomato, with hints of fresh green herbs underneath. On the palate, it’s wonderfully vegetal, with notes of celery and lettuce. It even reminded us of gooseberries, but we’d just harvested some from the bush in our garden, so that might have influenced us!

After that first fresh impression, the celery notes come through alongside a fairly strong bitterness and peppery kick. It’s a complex, rounded extra-virgin olive oil. We’ve tasted it several times, and somehow we always discover a new aroma or flavour.

It’s a delicious and versatile oil that stays true to its French heritage, Mediterranean in every drop. You can use it raw to enjoy all its fresh aromas, but it’s also perfectly suitable for cooking. Try it with a fresh French baguette from your local farmers’ market and some seasonal vegetables. You can also use it to cook the beef for a beef bourguignon, then add another drizzle just before serving for an extra burst of flavour.

We think it’s well worth trying. Enjoy!
