Sensory profile:
It is an intensely clear golden-yellow color with slight green hues. Its aroma is well-defined and rounded, rich with fragrant hints of mint, rosemary, and sage, complemented by vegetal notes of artichoke, chicory, and lettuce. The taste is robust and refined, with flavors of cinnamon, black pepper, and almond. Bitterness is pronounced, and pungency is distinctive. It is ideally suited for bruschetta with tomatoes, swordfish carpaccio, grilled porcini mushrooms, marinated tuna, lentil purée, pasta with meat sauce, boiled octopus, roasted red meat or game, and hard, mature cheeses.
Frantoio variety:
Frantoio is an Italian olive variety originally from the Tuscany region. Frantoio olives have excellent organoleptic characteristics therefore its EVOO is highly appreciated all around the World. The olive oil made from Frantoio olives has very high stability, which makes it suitable even for frying. Its oil has a fruity flavour with mild spicy and bitter notes. Typical aromas are fresh herb, tomato, lettuce, artichoke, apple, grain, rosemary, celery and almond.

This is another fantastic oil from Quattrociocchi, made from one of our favorite Italian olive varieties, Frantoio. Its aroma is simply incredible, with hints of green herbs like mint, rosemary, and sage, balanced by subtle notes of artichoke. On the palate, you’ll find warm hints of cinnamon and fresh green notes, followed by a bold kick of black pepper and a distinctive, vibrant pungency. It’s one of the most robust Frantoio oils we’ve had the pleasure of tasting - a true delight!
We love using it to elevate stews or to finish meat and vegetable dishes. It’s absolutely delicious drizzled over roast potatoes with pork loin. For dipping, try pairing it with semi-dry cheeses and sourdough bread. This oil is like an aria in a Vivaldi opera: virtuoso, intense, and unforgettable. A must-try!
