Poumal variety:

Verdale variety:

The Verdale olive variety originates from the Mediterranean region, particularly France. It is renowned for producing high-quality olive oil with a mild, buttery flavor, accented by subtle grassy notes and a slight peppery finish. Verdale olives are also valued for their versatility and adaptability in various growing conditions.

Oliviere variety:

The Oliviere olive variety originates from the Languedoc-Roussillon region in southern France. It is known for producing robust olive oil with a distinctive fruity flavor, marked by notes of green apple and a hint of bitterness. About Querubi:

In 2006, Willem Voorvaart purchased a 500-hectare piece of land in the French Pyrenees that had been untouched for 50 years. With a grand vision, Willem planted 6,000 olive trees (including varieties like Verdal, Poumal, Oliviera, and Picholine) and began farming olives in a traditional manner that honors the land. He spaced the trees widely, just as it was done in the past, and used chopped bark and wood chips as mulch to keep weeds at bay. His farm also features a solar-powered irrigation system and low-energy buildings, embodying a sustainable future. Willem's goal is to produce 15,000 bottles of exquisite Extra Virgin Olive Oil each year. By purchasing a bottle of Querubi, you help make Willem's dream a reality and support the future of sustainable farming.

This oil is the first French oil in our shop, and we couldn't be more excited! Holly from Querubi Farm kindly wrote to us and sent a bottle of this delightful oil. We fell in love with it at first taste; its aromas and flavors brought back wonderful childhood memories. Querubi Farm is a young, emerging farm dedicated to producing premium quality organic EVOO in a traditional and sustainable manner. This oil is made from local varieties such as Poumal, Verdale, Oliviere, and Picholine. It features beautiful aromas of green apple and artichoke with a hint of grass. When you taste it, you'll notice the prominent green apple flavor, followed by subtle notes of green almond. It has a medium to high spiciness and low to medium bitterness, so be prepared for a delightful peppery, spicy kick; this oil is quite distinctive! It's wonderful paired with strong cheeses, cured meats, or as a finishing touch to any dish. It's also fantastic for dressing rocket with Manchego cheese or enjoying with a few slices of apple, some blue cheese, and good sourdough bread. While it's a stable oil with high heat resistance, we recommend savoring it raw to fully appreciate its unique qualities. Bon appétit!
