Viola Almanacco Extra Virgin Olive Oil (500ml) - 100% Frantoio

"Almanac: Synthesis of a Style. The memory of family values passed down through the generations and looking towards the future with the aid of research. We are convinced that extra virgin olive oil is not merely the fruit of the olive, but a cultural and social assembly united with the many necessary resources to achieve the final result: the land, the sun, the plant and its fruit, the weather, water, and technology. Knowledge, awareness, and respect for these factors culminate in creating the finished product, Almanac, and contribute to providing the energy to continue creating our future." - Marco Viola

About Azienda Agraria Viola:

There is a magical piece of land in Umbria, nestled between Assisi and Spoleto on the hills of Foligno. This is the home of the Viola family. The tale of Viola Olive Oil begins in the early 19th century when Biagio and Lucia passed on their love and passion for olive trees to their son, Ferdinando. As years passed, the moment arrived when Diamante, Ferdinando's son, transformed the family's passion for olive groves into a small family business.

Biagio Viola, the son of Diamante, ensured the company's prosperity while passing the Viola family legacy to the next generation - Marco. Marco comprehended the changes of modern days while carefully preserving the family's legacy and traditions. With his professionalism and environmental respect, the Viola name became synonymous with love for family and land, deep gratitude, and quality.

Marco's philosophy is that every bottle of Viola olive oil carries its own unique history. We also believe that each bottle of Viola Olive Oil is a part of the Viola Family history, making this oil truly remarkable.

The family farm spans 14 hectares with 5000 olive trees. Presently, they harvest olives from 65 hectares with 22,000 trees, producing olive oil in the family mill built in 1927, now equipped with the latest technology. A remarkable family with a rich history and beautiful olive oil - this is Azienda Agraria Viola.

ElOlivo Review:

This exquisite oil symbolizes both the Viola Family's rich heritage and its promising future. Crafted solely from Frantoio olives harvested from century-old trees that have been part of the Viola Family's journey from the very start. It's an extraordinary oil, carrying deep significance for both the Viola Family and ourselves. Upon uncorking, its distinct bouquet unfolds, boasting captivating aromas of artichoke, lettuce, and chicory, complemented by undertones of fragrant herbs like thyme, sage, and mint. Upon tasting, it greets the palate with a velvety, sweet introduction, followed by delicate hints of white almonds and lightly roasted African coffee, along with subtle echoes of dark chocolate. Its impeccably balanced spiciness and bitterness are truly remarkable. Undoubtedly, one of the finest extra virgin olive oils crafted from Frantoio olives that we've ever encountered. Reserved for special occasions, it lends a sublime finishing touch to any dish and is perfect for dipping. We've even experimented by drizzling it over our Basque cheesecake, resulting in a truly delightful flavor profile. The Almanacco is unquestionably an exceptional oil, belonging to the category of must-try culinary treasures.
