“Il Sincero is an extra virgin olive oil produced from one cultivar, Moraiolo, a major varietal in the area. Small-sized old plants cultivated following traditional methods on stony hillsides at 400 metres above sea level. The roundish fruit is harvested by hand in October at the start of the ripening process and produces an extra virgin olive oil with a unique intense flavour.” Marco Viola 

Harvest time: October - November

Pressing: continuous processing machine

Storage: close the bottle after use and keep it in a cool place, away from heat or light sources

Tasting notes:

Appearance: limpid after filtering

Density: average fluidity

Colour: green with a slight golden tinge

Aroma: full-bodied and definite, perfumed with herbaceous notes of thistle and the    balsamic scent of mint, basil and rosemary

Flavour: mouth-filling taste, with hints of thistle, black pepper and almond on the finish.

Recommendation of usage:

Its definite and intense flavour pairs remarkably well with bean soup and chickpea cream with toasted bread; excellent on larded pork fillet and wild salad. Perfect with roasted game, jugged hare and roast pigeon breast with sweet pepper sauce. It is an ideal accompaniment to medium mature cheese and orange or tangerine sorbets.

Moraiolo variety:

Moraiolo is an Italian variety and originates from the Tuscany region. It is well known for the quality of oil it produces. The Moraiolo Extra Virgin Olive Oil is a distinctively fruity oil with high intensity of bitter- and spiciness. Olive Oil made from the Moraiolo variety has pleasant aromas of fresh grass, green almond and artichoke.

Il Sincero means; the sincere. You will understand its name when you taste this oil. It has nothing to hide strong intense vegetable aromas with green herbs and with notes of mint. If you taste the oil first you will notice the thistle followed by notes of almond and black pepper. Then get ready for a strong spiciness and pungency. Rich aromas and strong taste, you will notice it from the moment you open a bottle of Il Sincero. The more than 100 years of hard work and commitment of the Viola Family resulted in this beautiful oil. We use it only raw. It is perfect with any roast vegetable or any meat dish.
